Offering number two in the Great Ice Wine Recipe Resolution
Too simple to even call a recipe.
1 tsp garlic infused olive oil (or oil plus 1 clove of minced garlic)
2 Chicken breasts, cut into 1″ cubes
1/2 tsp fresh thyme
1 stalk celery, cut on a angle
1/3 cup ice wine
salt and pepper – to taste
Heat a skillet on medium heat. Add the garlic oil. Add the chicken and brown on all sides, about 6 minutes. Once the meat is no longer pink, but still needs cooking, add the celery and thyme. Cook until all juices have gone. Add the ice wine. Stir until the wine has reduced to a thick syrup and coats the chicken. Season to taste. That’s it! Add a few chilli flakes if you want to turn up the heat.
Serves 2.
I served this on a bed of pasta with butternut squash and wilted spinach.
